This is a super easy oven-baked meatballs recipe that is so simple to make, and baking them in the oven frees you up to do the rest of your food prep or other tasks. Here is what you will need: (4 -6 people)
1) First, pre heat your oven to 400 degrees. 2) Next, take spaghetti squash and puncture it with a sharp knife (be careful!) Once you have punctured the squash on all sides, set aside. 3) Next, chop onion finely, heat your skillet over medium heat and add your 1 tbs of fat, then saute onion until they are soft. Took me about 6 mins. Once they are done, set them aside and let them cool. 4) While your onions cool, mix in a large bowl the ground turkey and spices. Once onions have cooled add them to the meat mixture as well. 5) Now its time to make the meatballs, take the meat into your palms and work into 2-3 inch balls. Place on a cookie sheet lined with tin-foil or parchment paper. Once you have made all the meat into formed balls, place the cookie sheet in the oven for 10- 15 mins. (This depends on the size of your meatballs) 6) While your meatballs are cooking. Its time to cook the squash, based on the size of your microwave and size of your squash cooking time will vary, but place the punctured squash in the microwave and cook for 5 mins at a time. Check after each 5 min period to see if it is ready. When the squash apears soft it is done. Mine took 15 mins total. 7) Once squash is cooked, slice in half and let it cool. By this time the meatballs should be coming out of the oven. Let everything sit for a few mins then use a fork to shred your squash and start creating your "Pasta & Meatballs!) This meal takes about 20 mins total, Enjoy! Timmy & I sure did :) We had plenty of leftovers from this recipe because it was just the two of us. So they are packaged into lunch for tomorrow and the rest in the freezer for a quick dinner on a busy night.
